SuperBowl means yummy food!

Hurray, it's February!

As such, my husband and I are no longer paleo-only - we will stick to our healthy eating plans but are welcoming pastas, breads, and sugar with moderation back into our diet.  WOOOHOOO!

That being said, can I just say how excited I was to cook for the Super Bowl? My husband is a football fan (Giants) and for him, the Super Bowl is a holiday.  For me, the Super Bowl means fun commercials, a half-time show sometimes worth watching, and of course a chance to make yummy snacks! I say snacks because we don't really do a "meal" on Super Bowl but I make a variety of small things to eat and we all dig in.  This year we hosted the game viewing in our home and my littlest brother (who is 11 and is obsessed with my husband,) my mom, and my grandfather came over to watch.  A good time was had by all.

Now! Back to the food! Let me preface this by saying that these snacks were not paleo but I strived to make a healthful version of the football food that we enjoy. So here we go:

The first thing I made were Hebrew National "pigs in a blanket."  They're all-beef, kosher, and baked so I felt good with this choice.  I'm sure I'll be getting feedback shortly about all the ways that they're still not healthy but again, my goal was to be able to make the most healthful version of traditionally unhealthy snacks.  My original goal was to make them from scratch using crescent rolls and cocktail franks but when I got to the store the crescent rolls were all gone! Can you imagine? So plan b worked out well!

Next up I made these Sinfully Delicious Baked Mozzarella Sticks which can be found by clicking the link or on my pinterest board entitled Football Food for my Baby I advise that you follow the directions to the tee - make sure that those mozzarella sticks are good and frozen before you batter and bake them.  Lastly, I would recommend keeping a close eye on the time to flip the sticks so they don't end up a melted mess.

We also made English Muffin Pizzas with a variety of toppings (turkey sausage, mushrooms, black olives, etc.) which were so good I can't even tell you.  If you're going to do this, I recommend buying the large muffins (Stop and Shop here sells them) as they're more durable than Thomas' normal size.  I also recommend making sure that there is an ample amount of sauce or else they will be a bit dry.

We also served crudete with Marie's bleu cheese....I don't think anyone needs instructions for this.  Simple:  chop up celery and carrots, dip in dressing, enjoy!

Lastly, I made my husband's favorite dessert in miniatures - Lemonade Cupcakes.  This is not a difficult recipe but must be followed to the letter.  The most important part is that the consistency is the right texture (not too dry, not too wet.)  The recipe can also be found on my Pinterest board Wedding Cupcakes
